- 6 eggs
- 1/4 kg lard
- 12 corn tortillas
- 1/2 kg refried black beans
- 100 g ham (diced)
- 100 g Mexican white crumbly cheese
- 1 g green peas (boiled)
- 10 tomatoes
- Salt to taste
- 1 white onion
Fry the tortillas in piping hot lard until crispy and drain excess fat. Poach the tomatoes and liquidize them with the onion in a blender. Fry this sauce until cooked.
Spread the refried beans on the fried tortillas and place one or two tortillas on a dinner plate. Fry one or two eggs and place them on the tortillas, then pour the tomato sauce on the eggs and sprinkle them with the diced ham, peas and crumbly cheese.
